Great Meatloaf Recipe

ATKINS MEATLOAF
2 pounds ground beef
4 ounces cheddar cheese, shredded
1/3 cup low carb ketchup
2 eggs
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 teaspoon dried cilantro, or 2 tablespoons fresh
1 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste

Topping:
1/4 cup low carb ketchup
1/4 teaspoon blackstrap molasses
1 1/2 teaspoons granular Splenda or equivalent liquid Splenda

In a large bowl mix all but the Topping ingredients thoroughly. Mix the topping ingredients together in a small bowl. Place the meat in a greased loaf pan, or shape in 6 mini loaves and place in a foil lined 9×13″ baking pan. Brush or spread on the topping. Bake at 375º 45 to 60 minutes for a single large loaf or about 30-35 minutes for the mini loaves or until the internal temperature reads 140-145º.

Makes 6-8 servings
Can be frozen

Eric’s 4-Bean Chili

This is my chili recipe. I have had several requests so here it is. You should know I rarely keep to it.

Ingredients

  • 1 lb lean ground beef
  • 1 8oz can dice tomatoes
  • 1 15oz can of Black Beans
  • 1 15oz can of Red Beans
  • 1 15oz can of Pinto Beans
  • 1 15oz can of Kidney Beans
  • 1 4oz can of dice green chiles
  • 1 8oz can of tomato sauce
  • 4 fresh jalapenos
  • 4-5 cloves of garlic (about 1/2 a head)
  • 1 onion
  • 2 teaspoons of cumin powder
  • 3 tablespoons of chili powder
  • 2 teaspoons to 2 tablespoons of black pepper
  • 2 teaspoons to 2 tablespoons of Cayenne Red Chile Powder

Directions

  1. Brown the meat
  2. mix all cans (don’t drain) and meat
  3. chop and add the veggies
  4. simmer for 1-2 hours. I usually get impatient at an hour, but 2 hours is the original recipe I started from.

Add (Real men) or remove (wimps) spicy elements as necessary.
